When a rate plan includes breakfast (BB — Bed & Breakfast), the full room rate is initially posted to Room Revenue. The night audit must then re-route the breakfast component to F&B Revenue: Breakfast to credit the restaurant outlet and ensure accurate departmental performance reporting. The breakfast value is the agreed F&B transfer rate (not the menu price) — typically set by management and used consistently for all BB rate plans. This re-routing is critical for maintaining accurate F&B Cover statistics and revenue per cover metrics.

⚠️ Audit Flags

Auditors check that the re-routing amount is consistent with the approved F&B transfer rate and that the total Room + F&B revenue equals the original room rate (no revenue leakage or double-counting). An incorrect re-routing inflates one department's revenue at the expense of the other. If the F&B transfer rate is not reviewed periodically, it may not reflect the actual cost of providing breakfast.
